Fruity French Toast
Ingredients
- 1/2 A dragon fruit (cut into cubes)
- 1tbsp Caster sugar
- 1loaf White bread (unsliced)
- 125g Cream cheese
- 3 Eggs
- 1tsp Ground cinnamon
- 1tsp Vanilla extract
- 100ml Milk
- 80g Slivered almonds
- Pinch of salt
Method
- Mix the fruit and the sugar in the bowl. Set aside for 15 minutes.
- Cut the loaf 4.5cm wide slice. Make 6 pieces of the bread.
- Cut a deep slit in the centre of each slice, create a pocket for the stuffing.
- Spread the inside thickly with the softened cream cheese.
- Divide the fruit among the pockets and press the open edge together to unclose the filling.

- In a shallow bowl, mix the eggs, milk, cinnamon, vanilla and salt until combined. Place the slivered almonds on plate.
- Coat the stuffed bread with the mixture then with almond.
- The bread can be fry or bake according to your preference.
