Fruity French Toast

Ingredients

  1. 1/2 A dragon fruit (cut into cubes)
  2. 1tbsp Caster sugar
  3. 1loaf White bread (unsliced)
  4. 125g Cream cheese
  5. 3 Eggs
  6. 1tsp Ground cinnamon
  7. 1tsp Vanilla extract
  8. 100ml Milk
  9. 80g Slivered almonds
  10. Pinch of salt

Method

  1. Mix the fruit and the sugar in the bowl. Set aside for 15 minutes.
  2. Cut the loaf 4.5cm wide slice. Make 6 pieces of the bread.
  3. Cut a deep slit in the centre of each slice, create a pocket for the stuffing.
  4. Spread the inside thickly with the softened cream cheese.
  5. Divide the fruit among the pockets and press the open edge together to unclose the filling.

  7. In a shallow bowl, mix the eggs, milk, cinnamon, vanilla and salt until combined. Place the slivered almonds on plate.
  8. Coat the stuffed bread with the mixture then with almond.
  9. The bread can be fry or bake according to your preference.
